  Collecting the Sap  
 
In late winter and early spring, the sugar bush is a favourite place for many people in Ontario, Quebec and the northeastern USA. Horses like this team of Belgians, are still often used to collect the sap to be boiled into maple syrup in the quaint and sometimes colourful sugar shacks built for this purpose.
